Snickerdoodle Cookies
This is a favorite of Birdie and Kathy's dad, snickerdoodle cookies. It's hard to not eat just one. This is a very big batch that makes 5-6 dozen cookies. But it is an easy one to cut in half or even fourths to make less. A fourth of a batch will make 12-14 cookies.
This is a hands on one for kids. The love it because they get to roll the cookie dough in a sugar and cinnamon mixture and place it on the pan.
Birdie and Kathy are sisters and part of the Utah Avenue Insurance team. They love to work, play and bake together. Baking with family is one of Birdie and Kathy's favorite things to do. The sisters have taught their kids the joy of cooking and want to share some of their favorite recipes with you that have been passed to them through multiple generations.
Snickerdoodles
2 Cups Margarine or Butter
3 Cups Sugar
4 Eggs
6 Cups Flour
2 tsp Soda
2 tsp Salt
Blend butter and Sugar. Mix in eggs. Add flour, soda and salt. Roll into balls and coat with cinnamon and sugar mixture. Bake at 325 for 12-13 minutes.
Variations:
Deep fry battered chicken and mix with sauce and serve up with side of rice.
Combine sauce with one pint of jam and a dozen or so raw chicken legs and thighs in crock pot. Cook all day on low. This is so good.
Add chunky chopped onions and pineapple with sauce and chicken and bake until onions are soft. Serve with side of rice and veggies.
